Domaine Jean-Michael Guillon Bourgogne Terroir De Gevrey Bourgogne Rouge 750ml

Jean-Michel Guillon described 2018 as "one that gave us a precocious start and a big crop set where it was absolutely necessary to drop fruit if you expected to obtain good phenolic maturities. We did a huge green harvest and even with dropping perhaps 50% of the potential crop we still realized close to 40 hl/ha. We picked between the 9th and the 20th of September and brought in very ripe bunches where the potential alcohols ranged from 14 to 15%. We did our normal vinification, which is to say with destemmed fruit during a longish cuvaison of between 4 and 5 weeks. We then racked the wines into barrel where most of them saw 100% new wood. As to the wines, we are extremely happy with them, partially because the wines have ripe structures but also because the terroirs are more evident than one might have thought given how hot the growing season was."
